Potassium bromate is an approved food additive in the United States but is banned in the United Kingdom and other countries. It is used as a flour improver, primarily in bread-making, to strengthen the dough and make it rise higher.
It has also been classified as a possible human carcinogen by the International Agency for Research on Cancer (IARC), due to its potential to cause cancer in animals. Some say limited evidence suggests it may have similar effects in humans.
Potassium bromide is not banned in the US. But the FDA sets limits on the amount of potassium bromate that can be used in bread-making, and that such products must be labeled accordingly. While many American bakers and bread manufacturers may have voluntarily stopped using potassium bromate, switching to other flour improvers, it is worth asking the question at your local baker’s.
