I hope you used a pressure canner for that beef stew and chicken. Those are low acid foods and cannot safely be canned simply in a water bath.
There are loads of books that can give you guidance in canning food safely. Take a look at the Ball Blue Book (which is not blue, by the way), it can get you started in the right way.
I am super careful about these things, I've been canning for about 40 years - learned from my grandmas - and I'm the daughter of a doctor of microbiology who was particularly interested in bacteria-caused food poisoning. I've been preserving food for so long (canning, dehydrating, freeze drying) that I've thought about working on a Master Food Preserver certificate, but I'd have to go all the way to Cornell U to take the official course and that's not possible, at least right now.
BTW, Dad was a research scientist for a pharma company and told stories to us kids about what went on there that would curl your hair. I take no meds because of Dad's stories.
TN reps, traitor governor need to grow some. They have a senate bill (2691) making it illegal to spray and no one is doing anything! I encourage everyone to call their local reps and get this poisoning stopped! Force them to act!
To which end, I have for a few years avoided purchasing hybrid seeds, and have each year allowed only one variety of a species to bolt and, and thus, produce seeds.
I rarely go to restaurants anymore, and hope, someday I can do what Margaret and others are doing around their home with chickens and the like, or find someone close that does and is willing to share.
For now, it's follow God's instructions, and pray RFK jr. knocks all this crap out of the US merchant infested park.
